Sweet Potato Pie Recipe

Ingredients for pie dough:
1 1/4 cup | All-purpose flour |
1/2 tsp | Salt |
1/3 cup | Shortening |
5-6 tbsp | Cold Water |
1 tsp | Cardamom |
Ingredients for filling:
1 cup | mashed sweet potato |
1/2 cup | salted butter |
1/2 cup | brown sugar |
1/4 cup | white sugar |
1/4 cup | Black Scottie Chai concentrate |
1/2 cup | evaporated milk |
2 | eggs |
1/2 tsp | vanilla |
1 tbsp | all-purpose flour |
Preparing your sweet potato:
- Preheat oven to 375 degrees.
- clean the dirt off your sweet potato, brush and wash off.
- poke a bunch of holes into the sweet potato all over using a knife or fork.
- rub oil over your sweet potato and sprinkling some salt on it.
- place in oven and let bake for about an hour to soften.
- once you can easily poke it with a fork or knife it is finished.
- Set to the side to cool a little.
Instructions for dough:
- preheat oven to 450 degrees.
- Combine flour and salt evenly then add shortening.
- stir progressively adding water a little bit at a time till you get a bunch of pea sized clumps.
- once you have the clumps begins to roll into a solid piece of dough.
- using a rolling pin begin to roll out from the center into a nice circle. it should be relatively thin.
- set into pie pan poking a few holes into the bottom of the crust.
- cook in oven for 10 minutes at 450 degrees then set aside to cool while you make filling.
Instructions for filling:
- Preheat oven to 350 degrees.
- Mix Sweet potato and butter.
- Add sugar, milk, eggs Black Scottie Chai, vanilla, all purpose flour. Mix till smooth.
- pour into the pie crust.
- place into oven and bake for 55-60 min, till the center sets
- Remove and allow time to cool
- Its is a personal favorite of ours to slide up some fresh bananas and garish the top with it.
